About the Author

Amy Kimoto-Kahn was born in Fullerton, California and now lives with her family in the San Francisco Bay Area. She is Yonsei, or fourth-generation Japanese-American, and a mom of three. She is a graduate of the Miyajima Ramen School in Osaka, Japan, and has taught a popular series of Asian-inspired cooking classes for Williams-Sonoma. She shares her Japanese-American homestyle, kids-will-like-it-too recipes on her blog, EASY PEASY JAPANESEY. When she is not cooking, she runs a mom-focused marketing firm, Fat Duck Consulting that she founded in 2008. She was selected to be a judge for the 2016 Edible Communities EDDY Awards.

Bring authentic ramen into your home and never have to rely on a restaurant again

Having spent 10 years in Japan, I have developed a picky and discerning palate for Ramen. I also crave it at least once a week, and restaurants that serve up authentic ramen are very few and far between (trust me, we've tried several!) Amy Kahn's Simply Ramen recipes are the real deal. She outlines the process in making ramen from soup base (the Miso base is UNREAL... so rich and flavorful, with complexity and depth.. and it keeps for at least 10 days in the fridge if you make a full batch, and only gets better with time), noodles from scratch, and traditional toppings - my favorite, is the chashu (BBQ pork) that you braise in a soy-based liquid, that you can later re-purpose for seasoned boiled eggs. Everything is fool-proof, and the options are limitless. I really like how she breaks the book into several sections - Beef, Pork, Vegetable, Seafood, and Spicy, so that it appeals to virtually any demographic. (Yes, you can enjoy ramen as a vegetarian too!) The outline of the book in a way mirrors the way you build out a bowl of ramen - a step-by-step process that you can customize and make your own. The best part, is that she introduces creative additions,
such as chorizo, karaage (Japanese fried chicken), even lobster as specialty ingredients. Lastly, a bowl of ramen isn't complete as a Japanese meal, without a few sides. Whether it's age-dashi tofu, Japanese potato salad, or my personal favorite, "korokke" (or croquettes with potatoes and ground beef), Simply Ramen has everything covered. With the limitless possibilities, no bowl of ramen ever needs to be the same again!
This book has immediately become a staple in my collection - the photos are mouth-watering, and Amy Kahn incorporates stories of her first journey with this book including a narrative of her family life and tour of Japan... it's a unique piece of art that has been thoughtfully curated and enables Japanese cuisine to be accessible by anyone. You won't regret this for yourself, or as an awesome gift for a friend.

Beautiful Recipe Book

What a beautiful book! Very high quality. I've tried a few recipes and can see myself getting better as I try more and get more experience. I would definitely take a class from Amy.
These are not quick meals to put together. Food that is good and healthy does take time. Embrace it. It's worth it.

Sylvan Barnet, professor of English and former director of writing at Tufts University, is the most prolific and consistently successful college English textbook author in the country. The Worst Sequel I've Seen Since Godfather III

Wow, finally the authors and Bedford have managed to water down this book like other books out there. As a professor of English, I've used CIEQ through several editions for over twenty years and ordered this new edition for my classes sight unseen. Now for the first time ever, they have managed to create a book for a short-attention span audience. Many teachers might think this is a good thing (cater to your audience), but I do not. Will never use a Bedford book again after this fiasco. Issues are tackled as perfunctorily as a small daily newspaper. Sure, it's interesting to take on contemporary subjects like social media, but not with a bunch of letter-to-the editor kind of fluff. Difficult essays (like those on poverty) are available online only. How will we discuss in any depth in class? Must I have students print them out? Or is it also outdated to have students examine and discuss actual words of texts in the classroom? Sure, the editors cover ethereal matters like happiness in depth, nearly impossible to argue about at the undergraduate level without sentimentality and cliche. I dare teachers who use this book to share the essays the book inspires their students to write. Jabber jabber.

One of My Favorite Books

For those familiar with the earlier editions of this book this edition is updated to have a few more modern issues lending a bit more credence to the word "current" in the title. However, as much as I have enjoyed this book throughout the years I am still not fully convinced it is really current enough. I would prefer to have more content related to computing/cyber issues/technology in general, global warming, robotics, war in the 21st century, genetic modification/manipulation, cloning, and more "on the horizon" issues that humanity will sooner or later be facing. This book always seems to be a few steps behind the more modern challenges that we face as humans. However, in reviewing what actually is in the book it is an excellent piece of work. Anyone looking to become a more critical thinker in general will benefit greatly by buying this book.

About the Author
Paul Dowson has a business background and gained his MBA from the University of Leeds in 1992. To pursue his interest in teaching he joined Leeds Metropolitan University in 2002 where he lectured in the area of Personal Development for ten years. In 2005 he developed with Engage Mutual Assurance ‘LifePlan’, an innovative Corporate Responsibility (CR) programme aimed at defining personal and professional pathways for adults of all ages. From 2007 to 2012 Paul was a Senior Lecturer in the School of Applied Global Ethics and working with Prof Simon Robinson developed the Responsible Engagement programme which sought to build student identity around taking responsibility for self, other and global concerns; as well as introducing students to Corporate Responsibility.

About the Author
Jean-Pierre Wybauw is an international chocolate and sugar processing consultant who travels the world giving courses, lectures, readings and demonstrations on chocolate processing. Jean-Pierre often makes guest appearances on foreign television cookery programmes. He is also a well-known and respected member of the jury in numerous competitions. His expert opinion about working with chocolate is greatly appreciated, especially in international contests. Jean-Pierre Wybauw has won many awards and competitions, among which, in 2002, the coveted 'Chef of the year' title at the Culinary Institute of America. He was awarded numerous prizes for his work. Frank Croes is a renowned photographer, specialised in culinary photography. He was responsible for the photographs in Fine Chocolates 2: Great Ganache Experience and Chocolate Decorations.

Content: Chocolate processing, rheology, shelf life, sugar processing, starting out, praline recipes, fat-based recipes, ganaches, caramels, Nougat, fruit-in-liquer, marzipan, truffles, fruit dough.

This is an advanced book meant for advanced hobbyists or professionals. For example, there are no sections on how to pipe chocolate or how to melting chocolate - this book assumes you have that knowledge. Even more advanced knowledge such as how to use molds, using the guitar, or the enrobing machine is assumed.

My favorite section is the sections on chocolate tempering (precrystallization as this book calls it) and troubleshooting chocolate coatings. It goes through all the things that can go wrong - patches of dull chocolate, difficulty in unmolding, air bubbles, cavities, streaks - and goes through how to correct these problems and why they happen.

I also enjoyed the section on shelf lives and factors which can change them - such as the effects of chocolate:cream ratio, sorbitol, water, corn syrup, alcohol, and so on. This section was is something I have not seen with this level of detail in other chocolate books. All recipes come with an Aw rating, which measures the humidity of the center and its perishibility.

The second half of the book (in terms of pages) is recipes. The photography here is beautiful. The recipes are for professional and industrial use only, with a heavy bent towards preservation of centers. Ingredients such as sorbitol and invert sugar are used. If you are not professional, you may not use the recipes directly, because you may use simpler ganache recipes. But you still may get ideas from them.

The English translation has some "character" as well. If you are used to buying these translated French pastry books (Patiserrie of Pierre Herme, Au Coeur des Saveurs, and so on) it is about the same. Otherwise it takes some getting used to.

A MASTER BOOK BY A MASTER CHOCOLATIER

This book is the third addition to my chocolate library in the last few months. The other two are 'Chocolates and Confections' by Grewelling and 'Making Artisan Chocolates' by Shotts. All three are top quality books.
This one by Wybauw is an excellent book covering a variety of methods, procedures and products. It is a professional book as can be seen by the high price. If you are not very experienced with chocolate, but are adept in the kitchen, don't blow your money. Try your hand first, using the book by Shotts, which is very good and very cheap (see my review).
Wybauw does not only deal with chocolaterie in this fine tome, but with many aspects of candymaking, including fruit pastes, marzipan, caramels, nougat, candied peel etc. All types of chocolates are exhibited, including, molded, ganaches and enrobed. There are many recipes for different kinds of ganaches and fillings. The methods are clearly depicted in color photographs and products are alloted a full page photo each. Tempering techniques are explained in detail and there are troubleshooting sections and information charts everywhere.
Special attention is given to the preservation of centers. The author uses sorbitol, a derivative of glucose, that is used in several foodstuffs as a humitifier and preservative, and even in toothpaste!(it is the ingredient that gives you that cold refreshing sensation when you brush your teeth). Research is still being done as to the safety for the human health if it is consumed in great quantities.
The translation is not as bad as some other reviewers have depicted it. I still haven't found a sentence or instruction that I have not understood.
Weights are in Metric as is the case with all self-respecting professional books. Chocolaterie and candymaking need precise measuring, and cups and spoons will just not do. Too much space for error.
Now, a question that I have asked myself and I am sure that many others have asked themselves also: Considering the price of these books and having the choice of buying only one, which would it be? A difficult choice indeed but between Wybauw's and Grewelling's book I would choose 'Chocolate and Confections' by Greweling; more pages, more products, cheaper price, and you can use the difference between the two to buy 'Making Artisan Chocolates' by Shotts if you choose to. If you can affort it though, don't miss out on this book.

Excellent content, impossible translation

It is never a good thing to have to read a book that has been translated, but cookbooks that have been translated into the English language are usually quite acceptable. It is a shame that the translation of this book was not revised by a native English speaker. Some of the instructions are true riddles. And the terminology is more than a little odd. This fine edition would justify hiring a qualified translator.

The twelve links that make up this chain of causes and effects are an extension of the four noble truths, the heart of the Buddha's teaching, and demonstrate in particular the connection between true suffering and true sources of suffering. This oral teaching by Geshe Sonam Rinchen is based on the Rice Seedling Sutra and the twenty-sixth chapter of Nagarjuna's Treatise on the Middle Way.

About the Author
Geshe Sonam Rinchen (1933–2013) studied at Sera Je Monastery and in 1980 received the Lharampa Geshe degree. He taught Buddhist philosophy and practice at the Library of Tibetan Works and Archives in Dharamsala, India, as well as in dharma centers around the world.

Disappointed

I was very disappointed with this book. With a plain, straightforward title, I had hoped the writing style would be the same. But it seems the author's goal was to shed light on Tibetan sources that dealt with karma, rather than to shed light on karma itself.

I often felt he was explaining about mandalas that symbolize karma, rather than explaining karma.

Karma is a complex topic. I don't feel I understand it any better after having wrestled with this book.

Good introduction on the twelve links of D.O.

If you are looking for a good introduction to the twelve links of dependent origination, this is a very good book. D.O. is a central concept of the Buddha's teachings.

Like many topics in Buddhism, however, one is given a list -- six of this, eight of that, etc. I often find myself asking: "what did the Buddha mean by 'form & function?'" This book tells you in plain English. I'm a big fan of Ruth Sonam's style.

While this book may not answer all of your questions about karma, if you're a beginner like me, it's a good start.

Helped me

This book helped prepare me for the EC-Council CEHv8 exam. The author does a good job of explaining why some possible answers are wrong, how others are just distractions, and pointing out why the answer is the right answer. The test on the CD helped me identify where I needed more study.( I used this book as an adjunct to the EC-Council CEH v8 training courseware.)

Good Supplemental Study Guide For Beginners, Refresher for Experienced IT Professionals

This book was great and covered a lot of relevant CEH topics in depth. I actually found the questions in this guide to be more challenging in some ways. That being said, there were a few minor errors in the book. For instance, there's a question about the chmod command (Question 5 - Attacking Systems Chapter) that incorrectly says that 'chmod 711 file.txt' gives read-only permissions to the group and others, whereas the correct answer would be 'chmod 744 file.txt.' Overall, the errors were fairly few and far between though.

Anyways, I exclusively studied the questions from this book and was able to pass the CEH v9 exam today with an 80%. Granted, I do have a couple years experience as an IT security professional, in addition to an A.S in Cyber Security, a B.S. in IT Management and two IT security certifications (Sec+ and GCIH), but I honestly don't think any of those things gave me too much of an advantage when it came to answering the questions on the exam. I think you'd probably need to study more than this book if you're without any prior experience or education on the subject.

Bought this book for a college class and it did't come with the DVD i needed. When I asked the company they told me to simply look on their website (which wasn't posted). Not to happy with product or service. But the book is fairly nice.
